Brussel Sprout & Broccoli Salad

Delicious fresh salad for lunch today! This is probably my favourite salad combo! I love putting dried fruit and diced apples on my salad as it adds a little sweetness and goes nicely with a balsamic vinaigrette and feta! Some of my other favourite toppings for salads are nuts and seeds especially pecans and pumpkin seeds. I find they add a nice crunch and more texture to your salads and are also a great source of protein. Adding fresh broccoli is another way to add some more crunch and new flavours to your salad as well.



Healthy Foodiee Tip!

Add dried fruit and nuts to spice up your salad! If you don't enjoy eating your salads you aren't making them right!

I LOVE switching up my salads! I find that by switching up your choice of greens and swapping out your regular leaf lettuce for kale, spinach, arugula, or beets and broccoli slaw, makes salads so much more fun! I get bored of eating the same salad so it's always good to switch things up! From your base to your toppings, protein and your dressing, it's important to switch things up to have that variety when trying to eat clean so you never get bored of eating those veggies!


Eating healthy doesn't have to be hard! I find it fun and exciting to put together my own creative healthy meal ideas and find by choosing the right ingredients they can taste delicious!


Prep Time: 10 minutes

Serves: 1


Ingredients

1 cup broccoli slaw

1/2 cup chopped broccoli

1 cup shredded beets


Toppings

1/8 cup organic dried cranberries

1/8 cup chopped raw pecans

1/8 cup Feta cheese

1/2 apple, chopped (honey crisp are my favourite for salads)

1/8 cup roasted sunflower seeds

1/8 cup Renees balsamic vinaigrette


Directions

1. Wash beets and broccoli. Peel beets and shred with a cheese grater. Cut florets off of the broccoli and set aside.

2. In salad bowl, place broccoli slaw, chopped broccoli and shredded beets.

3. Wash and dice apple and place in salad bowl.

4. Top with cranberries, pecans, feta, sunflower seeds.

5. Place dressing on salad or in a small dish on the side. Serve and enjoy!
