Pumpkin Spice Trail Mix Cookies

I promised you more pumpkin recipes and here they are! These pumpkin spice trail mix cookies are the perfect sweet little treat that will satisfy your sweet tooth and give you your pumpkin spice fix! This is one of my favourite seasons for recipes because I just love all of the fall flavours and spices! I also LOVE fall colours and of course wearing cozy baggy sweaters!


These trail mix cookies can be made with all your favourite nuts, seeds and dried fruit! They are packed with protein to make these cookies a more filling and satisfying snack instead of the sugar high and crash that you usually get from store bought cookies. These cookies are great for breakfast with your morning coffee (or pumpkin spice latte hehe), make a yummy afternoon snack and are fun for the kiddies!


These trail mix cookies are vegan, gluten free (as they are made with oat flour), dairy free and are refined sugar free!



I personally love making large batches of cookies and freezing them to pull out later for a quick snack! You can easily pull these cookies out of the freezer the night before or even in the morning and they will be thawed and ready to eat by the afternoon! You can heat them up in the microwave and eat them warm to avoid waiting for them to thaw!


If there are any nuts, seeds or dried fruit in these cookies that are not your favourite, you can easily swap them for another! These cookies are super moist and are packed with lots of flavour and crunch!


As many recipes call for oat flour these days, instead of buying oat flour I usually just take my oats and blend them in the food processor or magic bullet! Super easy to make your own!


Pumpkin Spice Trail Mix Cookies


Prep time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Gluten Free | Dairy Free | Vegan | Refined Sugar Free

Ingredients

1 cup large flake oats

1/2 cup oat flour (ground oats)

1/2 tsp baking powder

1 1/2 tsp cinnamon

3/4 tsp allspice

1/4 tsp salt

1/2 tbsp ground flaxseed

1 tbsp chia seeds

1/2 cup dried cranberries

1/2 cup chopped raw pecans

1/2 cup unsalted pumpkin seeds

1/2 cup pure pumpkin

1 tbsp coconut oil

2 tbsp unsweetened vanilla almond milk

3 tbsp maple syrup


Directions

  1. Preheat oven to 350 degree.

  2. In a large bowl, mix together oats, oat flour, baking powder, cinnamon, allspice, salt, chia seeds, ground flaxseed, cranberries, pecans and pumpkin seeds.

  3. In separate bowl, mix together pumpkin, maple syrup and almond milk.

  4. Melt coconut oil in microwave for 30 seconds on high heat and add to mixture.

  5. Add wet ingredients into the dry ingredients and mix well.

  6. Line a baking sheet with parchment paper. Spoon out cookie dough to form small balls and place on baking sheet. Press down cookies slightly.

  7. Top cookies with oats, cranberries and pumpkin seeds (pressing them into the dough slightly).

  8. Place in oven and bake for 15 minutes, until golden brown.

  9. Let cool for 5-10 minutes.

  10. Serve and enjoy!
