Veggie Hummus Wrap


Hummus on wraps is my go to! What I love most about wraps is they taste yummy no matter what you put on them! I love having some sort of spread on my wrap and then loading it up with veggies and drizzling balsamic glaze on top for a little extra taste! What I like about balsamic glaze is that it has tons of flavour so you only need to add the tiniest bit!


I usually eat my wraps cold and load them up with fresh veggies! I love having wraps in the summer because I find them so fresh and even more delicious when the veggies are ripe and in season!


I am obsessed with using pea shoots to add a little extra crunch and to add some greens to my dishes!

Wraps are the easiest lunch to make and you can add so many different fillings.







Ingredients

1 wholewheat wrap

1/2 cup baby spinach

1/4 cup roasted pine nut hummus

3 small radishes, sliced

1/2 cup sliced orange and red peppers

1/4 cup baby tomatoes, halved

1/4 cup sliced cucumber

1/8 cup feta cheese, crumbled

Balsamic glaze

Pea shoots


Directions

1. Spread hummus on wholewheat wrap.

2. Slice tomatoes, cucumber, peppers and radish. Place spinach on top of hummus and place all diced veggies on spinach. Top with pea shoots, balsamic glaze and feta cheese.

3. Fold or roll up wrap and enjoy!
